Women Lead Story - Chloe Mattner

Chloe Mattner is well on her way to being acknowledged as the leader of a Vegan Empire. Based in Adelaide, Chloe began her journey with an Instagram page (@chlosveganclub) showcasing her Vegan and Gluten-Free delicacies, which she delivered to her customers. In just a few years, she expanded her business to include a Coffee Van and a Cafe!

Chloe initially started with her baked goods business and subsequently opened Later Gator (@latergator.adl), a mobile cafe that catered to locals in Adelaide markets and in its regular spot in Kensington Reserve. The van's popularity grew to the point where, in January 2022, Chloe decided to open a permanent store, The Gator Club (@thegatorclub.adl)!

The Gator Club’s focus was to bring together Later Gator and Chloe's online bakery, Chloes Vegan Club. Since opening in September last year, the response from food enthusiasts about the 100% vegan cafe has been overwhelmingly positive.

Located on Payneham Road in College Park, The Gator Club has both indoor and outdoor seating areas and a space for local artisans to sell their crafts. Not only was the location previously not a cafe making the renovation excessive, but Chloe, with the help of Sunnyside Build Co, also designed the establishment herself. Talk about girl power!

Chloe is an inspiration to all, demonstrating that anything is possible if you put your heart into an idea!
